昨日我突然很想做日式咖哩,去了圖書館找書看,但那些食譜都並非我想學的那種日式咖哩(日式咖哩是有蘋果的嘛!),後來在網上給我找到了一個似模似樣的,我作了一些材料上的改變,終於都學會了日式咖哩的做法!口味一如在日本吃的那一種,超正宗!好了,以後都不用花錢到餐廳才可以吃到日式咖哩了!

材料:(4人份)

  • 4湯匙 牛油
  • 1茶匙 薑蓉
  • 1瓣 蒜頭切碎
  • 1/2個 洋蔥切碎
  • 1/2個 洋蔥切塊
  • 3湯匙 麵粉
  • 2湯匙 咖哩粉
  • 1個 新鮮蕃茄去籽打碎
  • 辣椒粉 隨個人口味
  • 1塊 月桂葉
  • 3杯 雞湯或菜湯
  • 1條 甘筍切1里米粒
  • 1個 薯仔切1里米粒
  • 8條 粟米切1里米斷
  • 1/2包 蟹味菇或其他茹類
  • 8條 秋葵,7條切1里米斷,1條切薄片作最後裝飾
  • 1小個 富士蘋果,去表後打碎或刨碎
  • 1茶匙 液態蜂蜜
  • 1湯匙 豉油
  • 鹽及胡椒粉 適量

Oh my god, this curry is so authentic, just like those you would have in Japanese restaurants, it's pretty easy to make, simple ingredients, you can be very creative with the fillings, add any protein you like if you want some meat or seafood.

Ingredients: (4 serves)

  • 4 tbsp butter
  • 1 tsp freshly grated ginger
  • 1/2 medium onion, finely chopped
  • 1/2 medium onion, cut into small chunks
  • 1 garlic clove, finely chopped
  • 3 tbsp flour
  • 2 tbps curry powder
  • 1 fresh tomato, pureed
  • 1 bay leaf
  • Chili powder, optional
  • 3 cups chicken or vegetable stock
  • 1 medium carrot, chopped to 1cm pieces
  • 1 medium potato, chopped in 1cm pieces
  • 8 pieces baby sweet corn
  • 1/2 pack Bunashimeji mushroom or other mushroom
  • 8 pieces okra, 7 cut into 1cm length, 1 cut into thin slices for garnish
  • 1 small Fuji apple, skinned, finely chopped or grated
  • 1 tsp liquid honey
  • 1 tbsp soy sauce

Have I mentioned Quinoa before? It's an ancient Andes people food and it's the highest protein grain in the world. Nowadays it's popular around the world for vegetarian or those eat for health. In fact it's toothy texture makes fantastic dishes, especially salad.

  • 250g seedless red grapes, halved
  • 4 spring onions, thinly chopped with an angle

在澳洲工作假期的時候,其中一樣最常接觸到的家常菜就是Quiche - 蛋批,因為我打工的咖啡店有賣。在過去三年學了很多西菜,但這個謙卑的菜就反而沒有做過,就最近男朋友從超市買了減價的cottage cheese回來,才想起做蛋批。

這個蛋批可以存放於雪櫃上三五天,用微波爐便可以輕易翻熱,是上好的早午餐,又或是給家裡那隻「化骨龍」做放學後的下午茶。材料沒有限制,可以發揮你的創意或除個人喜好加減改變。下圖我便將食譜內的粟米和洋蔥改為什菌和蕃茄。

  • 1/4 杯麵粉
  • 1/2 茶匙泡打粉
  • 6 隻蛋
  • 100克 車打芝士碎,另加額外
  • 1 杯小粒cottage cheese (茅屋芝士)
  • 2 杯一方寸切粒南瓜
  • 4 塊煙肉切手指尾長度
  • 1 個中型洋蔥切圈
  • 1/2 個翠肉瓜切片
  • 1/2 個粟米粒,或2/3杯
  • 1/4 杯牛油,溶化
  • 1 小棵番茜


批底:

  • 1 1/4杯麵粉
  • 100 克凍牛油切粒

My boyfriend likes egg, and one day he bought a couple of boxes cottage cheese because it's on sale, so I thought, I should make a quiche since it's something I ate so much while working in Australia, but never try to make one.

So here it is, a quiche combining two recipes from the internet, makes a very good lunch or breakfast, good to keep, good to reheat with microwave, and you can be very creative with the ingredients.

Ingredients: 

  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 6 eggs 
  • 100g shredded cheddar cheese or other tasty cheese plus little extra
  • 1 cup small curd cottage cheese
  • 2 cups pumpkin cut into 1 inch cube
  • 4 slices rashers bacon cut into pinky finger width
  • 1 medium brown onion slice into rings
  • 1/2 zucchini sliced
  • 1/2 sweet corn kernel
  • 1/4 cup melted butter
  • 1 sprig parsley

Crust:

  • 1 1/4 cup all purpose flour
  • 100g cold butter, cut into small pieces
  • 1 egg

法國洋蔥湯的材料基本上只有洋蔥也可以成事,要做得正宗一點,就要花點金錢放入白酒和乾邑,不過最重要的,還是無比的愛心和耐性去炒洋蔥。

 

材料:8人份

  • 100克 牛油
  • 10個 大啡洋蔥
  • 1支 白酒
  • 1/4杯 乾邑
  • 2公升 牛肉清湯
  • 1片 月桂葉
  • 1條 法包
  • 1 1/2杯 Gruyere Cheese 刨碎
  • 適量鹽和即磨黑椒

French Onion Soup, basically take only onion, can be very cheap, but this authentic version takes a little bit more upscale ingredients, but most importantly, is some TLC to fry the onion.

  • 10 large onions
  • 1 bottle of dry white wine
  • 1/4 cup of cognac
  • 2L beef stock
  • 1 bay leaf
  • 1 French bread, slice into 2cm thick round
  • 1 1/2 cup grated Gruyere Cheese

我一直都以為這個飯很難煮,被我列為「出街食」的項目之一。剛剛去了幾個月印度回來,打開雪櫃發現還存有很多之前造蘿蔔糕的臘味,於是試一試煮糯米飯,才發覺就這麼的容易。

  • 3/4杯碎料(臘肉、臘腸、冬茹、蝦米,任你個人喜歡)

  • 2茶匙沙糖
  • 1 湯匙孖蒸或紹酒

I always thought this is a dish you have to eat out, cause I thought it must be difficult to make at home. After making it for JUST the first time, I was so joyful to know that from now on it’s not necessary to go to restaurant anymore for this rice.

For those who don't know, these are Chinese sausages.

Ingredients: (makes 4 small bowls)

 

  • 1 1/2 cups of sticky rice
  • 3/4 bowl of mixed chopped bits (choice of Chinese sausage, preserved ham, dried shrimp, dried mushroom, according to your like)
  • 2 shallots, finely sliced (it's my personal touch to give more fragrance, you can omit it)
  • 2 tbsp soy sauce
  • 2 tsp dark soy sauce
  • 2 tsp sugar
  • 1 tbsp rice wine or xiaoshing wine
  • 1/2 tsp of sesame oil
  • Pinch of white pepper
  • 1 egg
  • 1 tbsp chopped spring onion
  • 1 tbsp chopped coriander

這是一個既容易煮又容易討好的焦糖忌廉燉蛋,特別是為那些愛吃甜的人。我煮的時候減少一點食譜建議的沙糖用量,對我來說也夠甜有餘。

  • 1 忌廉
  • 3/4 牛奶
  • 1 玉桂
  • 4 蛋黃
  • 1/4 白沙糖
  • 85g 白朱古力,溶掉
  • 額外沙糖(以金黃沙糖為佳)

This is a simple but pleasing crème brulee desert especially for people who has a sweet tooth for white chocolate, here I used a bit less sugar than the recipe suggested, sweet enough for me.

 

Ingredients for 4:

  • 1 cup cream
  • 3/4 cup milk
  • 1 cinnamon stick
  • 4 egg yolks
  • 1/4 cup white sugar
  • 85g white chocolate, melted
  • Extra sugar (prefer raw sugar)

坊間有很多不同的Tiramisu食譜,有的用上忌廉,有的用上咖啡味的酒,其實正宗的Tiramisu是沒有忌廉的,而必定是用上Marsala。Marsala的味道喝起上來一點也不覺得可以跟甜品扯得上關系,但一旦跟糖及蛋黃混合在一起便香味馥鬱。

手指餅我以前都是從超市買現成回來的,自從試過自己做手指餅之後,真的不能不相信自己製作的要比買回來的好味得多,而且材料又簡單,只是要多花一點心機而已。

Everyone likes Tiramisu, and there are way too many different recipes to make Tiramisu, some using cream, some using different kind of wine, like the coffee taste Tia Maria or Kahlua. But the most authentic Tiramisu has no cream, and only using Marsala, which doesn't taste anything for a desert, but after the wine incorperated into the desert, it's just divine, I don't think Tia Maria or Kahlua can give that mature taste.

Also for the finger biscuits, I used to buy from store, but they always say it's much better to make your own, I tried, and it's so fucking true. It's not difficult to make at all, just a bit more effort, but worth it.

Soy sauce, the core ingredient of Chinese cooking, let me use this chance to clear one mistake most foreigners made, cause too many times I open the kitchen draw of a non Chinese friend, they always has only a bottle of Dark Soy Sauce, this is so wrong.

Light Soy Sauce, is the soy sauce that we use the most, for it's great flavor and to salt the food.

Dark Soy Sauce, we use, but not too often, and we only use a little, for the sake of it's dark color and a hint of sweetness.

So if you would only have ONE bottle of Soy Sauce, make sure it's Light.

I heard that BBC made a list and put the Chinese 100-year-egg to the most revolting food in the world. I don't feel offended by that, quite the opposite I think that makes it special.

The taste of 100-year-egg is not as ugly as its appearance, I made this classic dish to a couple of my couchsurfers who had guts to try this most disgusting food in the world, and they both love it. So do try this at home if you can get on hold a 100-year-egg.

蒜蓉白酒煮蜆意粉一點也不新鮮,但這個菜譜在這些材籵料之上再加上鹹檸檬和辣椒,味道的層次就更加豐富,但又仍能帶出海鮮的鮮味,不會喧賓奪主。

鹹檸檬可用我們的中式鹹青檸,到南貨店買,2元一個。

火箭生菜可以到中環街市買,80元一磅。

There's nothing new about clam and pasta, in a white wine garlic sauce, but this one added chili and preserved lemon give it a much deeper flavor but still subtle enough to let the seafood shine.

You can buy the preserved Lemon in traditional grocery store, 2HKD for 1; rocket, or aragula lettuce can be bought in Central market, about 80HKD a pound.
